Maple syrup Tarte au Sucre

1 cup milk
1/4 cup flour
1/8 tsp salt
2 cups maple syrup (the real stuff)
2 egg yolks
1 tbsp butter

Mix flour, salt, and syrup. Add to hot milk (not boiling, just
hot). Cook until thickens, stirring constantly. Add 3 tbsp of
this to yolks (to warm up yolks). Add above to hot mixture and
cook another 3-4 minutes. Remove from heat and add butter. Let
cool and add to pie crust.
