Sweet Potato Pie

unbaked pie crust
1 Tbsp butter, softened
1 cup cooked mashed sweet potatoes
2 lg eggs, beaten
1 cup evap milk
3/4 cup packed brown sugar
1 tsp vanilla
1/2 tsp ginger
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
1 1/2 cup coarsley chopped pecans or walnuts

Whisk butter into mashed sweet potatoes in a large mixing bowl,
add beaten egg, then add next 8 ingred. Place into prepared pie
shell and sprinkle nuts on top. Bake at 375 for 45-50 minutes or
until knife inserted around edge of pir comes out clean. Pie will
firm up as it cools. Serve warm or cool topped with freshly whipped
cream (flavored with powdered sugar and your favorite liquer if
desired).
