Sweet Potato Pie

3-4 large sweet potatoes (about 1 lb)
4 tbsp butter at room temp
1/2 cup granulated sugar
1/4 cup dark brown sugar, packed
1 tsp grated orange zest
1/2 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp salt
3 eggs
1 (5 oz) can evaporated milk
2 tbsp Grand Marnier or orange flavored liqueur (optional)
Whipped cream topping

Bake potatoes wrapped in foil until soft. Place in mixer and add
butter. Next add sugar (both kinds), zest and spices. Beat eggs
and add Grand Marnier to mixture. Pour into sweet potato mixture
and mix together. Pour into unbaked pie shell and bake at 425
degrees F. for 10 minutes. Reduce heat to 300 degrees F. and bake
45 to 55 minutes more until knife blade inserted in center comes
out clean. Cool and enjoy warm or cold.
