Sweet Potato Pie

1 unbaked 9" pie crust
2 cups well drained sweet potato puree
14 oz. can sweetened condensed milk
1 Tbs. vanilla
2 eggs
1/4 tsp. salt

Preheat oven to 350 degree F. In a bowl beat sweet potato, milk,
eggs, vanilla, and salt until smooth. Pour into pie crust. Place
pie on a baking sheet and bake for 60-65 minutes, or until knife
inserted in center comes out clean. Cool on wire rack.

To make puree, peel 2-3 medium sized sweet potatoes. Chop into
1-1/2 inch pieces cover with cold water and simmer until potatoes
are tender when pricked with a fork. Drain all liquid from cooked
potato. Place potato in food processor and process to make puree.
