Rhubarb Custard Pie
Yield: 4 Servings

2 lg eggs
2 tb milk
1 1/2 c sugar
3 tb flour
1/2 ts nutmeg
3 c rhubarb; cut up
3/4 tb butter
pastry for a 2 crust pie

Slightly beat eggs. Add milk. Mix together and stir in sugar,
flour, and nutmeg. Mix in rhubarb.

Line an 8" pie pan with crust. Put filling in pan. Dot with
butter. Cover with a lattice crust. Sprinkle some sugar on the
top crust just before baking.

Bake at 400 degrees (moderate oven) about 50-60 mins.
