Mock Mince Pie

dough for a 10-inch piecrust
1/2 cup raisins
4 medium apples
1/2 cup apple juice
1 orange
3/4 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon brandy extract (optional)

Pare and slice apples, chop raisins, and mix with apple juice.
Scrub the orange well, juice it, and grate the peel. Add juice
and peel to the apple mixture. Simmer together in a covered pan
until the apples are very soft. Stir in the sugar, cinnamon,
cloves, and brandy extract This mixture will keep in the fridge
for several days.

Preheat oven to 450 F. Line a 9 inch pie pan with crust, and
reserve the extra dough for a lattice top crust. Reheat the filling
and pour it into crust while hot. Cover with lattice.

Bake for 30 minutes. Makes one 9-inch pie.
