Kentucky Derby Pie
1 cup firmly packed light brown sugar 3/4 cup light corn syrup 3 eggs, lightly beaten 1/2 cup semisweet chocolate chips 1/2 cup chopped toasted walnuts 1/4 cup (1/2 stick) butter,melted 2 tablespoons bourbon 1 teaspoon vanilla extract 1/4 teaspoon salt 9-inch unbaked pie shell
Preheat oven to 375 degrees. Blend all ingredients in mixing bowl. Pour into the pie shell. Bake 40-50 minutes, until crust is golden and filling is set. Let cool at least two hours before cutting.
Yield: one 9-inch pie

No flour and only brown sugar made this recipe very rich indeed. You could taste the burbon in this recipe more than other recipes I've tried.
