Impossible Coconut Pie
Yield: 6 servings

4 eggs
1 stick margarine, softened
1 ts vanilla
2 c milk
3/4 c sugar
1/2 c flour
1/8 ts salt
3/4 ts baking powder
1 c coconut (reserve 1/2 cup)

Put all ingredients into a blender and blend 30 seconds. Grease
and flour 10-inch pie pan or 9-inch square pan. Pour batter into
pan and sprinkle remaining coconut over batter. Bake at 350 degrees
for 40 to 45 minutes and coconut is golden brown.
