Buttermilk Pie Makes a 9 inch pie
1 Basic Pie Crust 1 cup granulated sugar 1/4 cup unbleached all-purpose flour 1/2 teaspon salt 1/8 teaspoon nutmeg, freshly grated 4 eggs, beaten 2 cups buttermilk 1 teaspoon vanilla extract
Prepare a basic pie crust, line a 9 inch pie pan with it, and partially bake it (7-10 minutes at 400 degrees F). Cool pie shell at least 15 minutes.
Preheat oven to 350 degrees F. In a large bowl, mix the sugar, flour, salt, and nutmeg. Using a wire whisk, blend in the eggs. Add the buttermilk and vanilla and beat until smooth. Pour into the cooled pie shell and cover the rim of the pastry shell with aluminum foil strips to prevent overbrowning. Bake until a knife inserted in the center of the pie comes out clean, approximately 45 to 55 minutes. Cool on a wire rack. Serve at room temperature.
